Cook the pasta in salted boiling water according to package instructions. Reserve 1/2 cup of pasta water before draining.
In a large pan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant (don’t burn it!).
Lower the heat and add the heavy cream. Stir and let it simmer for 2–3 minutes.
Add grated Parmesan cheese, salt, and pepper. Stir until smooth and creamy.
Toss the cooked pasta into the sauce. Add a little pasta water if needed to adjust the consistency.
Garnish with fresh parsley and extra Parmesan if you like. Serve immediately!
